Roher Kakao - Heiliger Hype oder halb gares Halbwissen?

If you’ve spent any time in the world of cocoa, you’ll sooner or later stumble upon a term that is whispered almost reverently: raw cocoa, or to use the international term: raw cacao. It sounds pure, it sounds natural, it sounds almost sacred. But what is really behind this term that has swept through the scene like a bittersweet wildfire in recent years?

And more importantly: Is raw cacao really as healthy as many believe?

The origin of the trend: romantic, but not historical

The idea of raw cacao does not stem from the Maya, Aztecs, or other traditional cacao cultures. These peoples always roasted their cacao. The modern raw cacao trend, however, developed in parallel with the raw food movement and is fueled more by a longing for purity, a connection to nature, and originality, rather than historically passed-down knowledge.

Raw cacao – a double-edged sword

What many don’t know (or choose to ignore): Unprocessed cacao naturally contains phytic acid, a so-called anti-nutrient. This binds essential minerals like calcium, magnesium, iron, and zinc in the gut and prevents their absorption. In short: all the good things that cacao actually provides may not even reach where they are needed when consumed raw.

Furthermore, microscopic culprits like mold or bacteria can survive on unroasted beans, as simple sun-drying is simply not enough for disinfection. It is only through roasting that these potentially harmful substances are reliably killed off.

And what about the taste?

To be honest: I also tried raw cacao two years ago. The taste? Not my thing. Something was missing. And that’s no surprise: during roasting, over 500 (!) aroma compounds are formed, which not only provide the incomparable cacao flavor but also make the cacao more digestible and well-rounded for our senses.

Fun fact: Truly raw cacao is rare anyway

Many don't know: Already during fermentation, the first processing step after harvest, temperatures exceed 50°C. By definition, cacao is therefore no longer truly raw. A slight catch to all the raw cacao romance, isn't it?

Scientific? Incomplete.

Scientific arguments for raw cacao often rely on its high antioxidant content. However, it is frequently overlooked that these substances offer little benefit without good bioavailability (i.e., without our body being able to absorb them), especially when other nutrients are simultaneously blocked by phytic acid.

So what to do?

I’ll be blunt: a little raw cacao certainly won’t hurt. But consuming it daily, and in larger quantities, is simply not recommended from a health perspective. Enjoyment with caution and knowledge – that is what we are aiming for with cacao, after all.

Tatsächlich enthält Kakao von Natur aus viel Magnesium – insbesondere roher, ungesüßter Kakao (wie zeremonieller Kakao oder reiner Kakaopulver). Die Bioverfügbarkeit, also wie gut der Körper das Magnesium aufnehmen kann, hängt jedoch stark von der Verarbeitung ab.

Die Kakaobohnen, die ihr bei uns im Shop kaufen könnt, sind in der Regel fermentiert, aber nicht geröstet – also roh im klassischen Sinne. Für mehr Geschmack oder bessere Verträglichkeit kannst du sie rösten – musst es aber nicht. Die Mineralstoffaufnahme wird durchs Rösten nicht unbedingt verbessert, sie bleibt auch bei rohem Verzehr gut – insbesondere, wenn du die Bohnen gut kaust oder sie in einem Smoothie o. ä. zerkleinerst.

Ich war bislang davon ausgegangen, dass das Magnesium auch aus verarbeiteten Cacao und aus Schokolade schlecht bioverfügbar ist .
Oder ist das nicht der Fall ?

Ich habe eine Frage dazu: die Kakaobohnen, die man bei euch im Shop kaufen kann sind roh, oder? Sollten diese dann vor dem Verzehr noch geröstet werden, um eine bessere Aufnahme der Mineralstoffe zu ermöglichen?
