(M)ein neuer Kakao: Der Chuncho

On the trail of the most delicious and oldest types of cocoa on earth, it is no wonder that I came across Chuncho cocoa. Located in the Urubamba Valley in the heart of Peru, this cocoa carries as much history as the Munich State Library.

In addition to the fact that Chuncho cocoa is genetically the oldest cocoa on earth, this bean gives us a floral, fresh and mild taste.

On my trip to Quillabamba in the Urubamba Valley, I was able to experience and feel for myself how far back the roots of this cocoa go and how anchored this plant is in the people of the region. Cocoa on every corner - for breakfast and dinner.

1. The origins of Chuncho cacao

The history of Chuncho cacao dates back to ancient times, when the Incas, who inhabited the Cusco area, began growing cacao trees in this region. But it wasn't until the 1990s that Chuncho cocoa was discovered by Peruvian cocoa expert Maruja Ignacia CĂłrdova, who came across some trees while hiking in the forest. Recognizing the exceptional quality of the beans, she began working with local farmers to preserve and promote Chuncho cacao.

2. Characteristics of Chuncho cocoa

Chuncho cocoa beans have a distinctive purple color and a shiny surface that reflects the high concentration of flavonoids and antioxidants that give them their unique taste and aroma. The beans are small and round and have a delicate texture that melts in your mouth. Chuncho cocoa is known for its floral, fruity and nutty notes, which vary depending on the origin and processing of the beans. It has a low bitter and acid content and is therefore ideal for high-quality chocolate products.

3. Production and trade of Chuncho cocoa

Chuncho cacao is grown in the cloud forests of the Andes at altitudes between 800 and 1,700 meters above sea level, where the climate and soil provide ideal conditions for growing cacao. The beans are harvested and sorted by hand, then fermented and dried on site to ensure the highest quality. Chuncho cocoa is a rare and exclusive type of cocoa whose production and distribution is limited worldwide. It is usually traded directly between farmers and chocolate manufacturers who value its high quality and unique properties.
